This Instant Pot Chicken Breasts in Gravy is my shortcut version of a classic roast‑chicken dinner—tender chicken, rich homemade gravy, and all the cozy comfort without the long cook time or messy clean‑up. The gravy develops right in the pot, infused with the chicken’s natural juices for deep, savory flavor. It’s perfect for busy nights, freezer‑cleanout cooking, or anytime you want comfort food fast. Pair it with mashed potatoes (store‑bought totally works) for a complete, satisfying meal.

  • 2 large bone-in, skin-on chicken breasts
  • Salt and pepper
  • 1 tablespoon vegetable oil
  • 1 onion, chopped fine
  • 3 garlic cloves, minced
  • 2 teaspoons minced fresh rosemary, thyme or combination or 1/2  teaspoon dried thyme or rosemary
  • 2 tablespoons all-purpose flour
  • ½ cup dry white wine
  • ¾ cup low-sodium chicken broth
  • 2 tablespoons unsalted butter
  • 2 teaspoons lemon juice


Instructions

  1. Brown the chicken: Pat the chicken breasts dry and season generously with salt and pepper. Set your Instant Pot to Sauté (medium) and heat the oil until it’s just starting to smoke. Place the chicken in the pot, skin-side down, and brown for about 4 minutes. Flip carefully with tongs and brown the other side for another 4 minutes. Transfer the chicken to a plate and pour off all but about 1 tablespoon of fat.
  2. Build the flavor base: Add the onion to the pot and sauté until softened, about 5 minutes. Stir in the garlic and thyme and cook until fragrant, about 30 seconds. Sprinkle in the flour and cook for 1 minute, stirring constantly. Pour in the white wine and scrape up all the browned bits. Let it simmer for about a minute to reduce slightly, then add the broth. Return the chicken to the pot, skin‑side up, along with any juices on the plate.
  3. Pressure cook: Secure the lid and set the Instant Pot to High Pressure for 9 minutes.
  4. Natural release: When the cooking time is up, perform a natural release. Carefully remove the lid, directing the steam away from you.
  5. Finish the gravy & serve: Transfer the chicken breasts to a cutting board and tent loosely with foil for 15 minutes. Skim excess fat from the surface of the sauce. Switch the Instant Pot back to Sauté (medium), bring the sauce to a gentle simmer, and whisk in the butter. Taste and season with salt and pepper. Carve chicken breasts into slices and serve with the gravy.
