
My husband and I have always traveled with our appetites wide open. We search for adventures that combine our love of food and travel. From the windswept coasts of Iceland to the vibrant kitchens of South America and China, we chase flavors the way some people chase landmarks. We’ve tasted dishes both wildly unfamiliar and comfortingly classic. As a result, every journey leaves me inspired to recreate those flavors back home. Finally, after retiring, we had the freedom to spend four unforgettable weeks eating our way through Europe. This is something we could only dream about during our working years. The aroma of saffron, the crackle of the socarrat, the way everyone gathers around the table — this recipe brings me right back to sun‑drenched afternoons on the coast. Moreover, it remains a classic memory in our adventures as a true foodie and travel lover.

Irish Brown Soda Bread
During our recent stay in County Galway, Ireland, we traveled with goof friends. We explored some of the most breathtaking parts of the Emerald Isle. We took day trips to the Irish National Stud Farm in County Kildare, wandered the serene grounds of Kylemore Abbey, and drove along the Wild Atlantic Way, where the rugged coastline and crashing waves left us speechless. One evening, we enjoyed a fabulous meal at Aniar, a Michelin‑starred restaurant in Galway’s West End — a true celebration of Irish ingredients and artistry. Among all these experiences, one of our favorite food memories was the Irish Brown Bread.
This hearty loaf takes me straight back to misty Irish mornings. Dense, nutty, and impossibly comforting, it’s the kind of bread that tastes like hospitality itself. All it needs is a slather of butter, just heavenly!
