This Irish Brown bread is incredibly moist yet hearty, with a rich, nutty flavor that pairs beautifully with Irish butter.

Ingredients

Scale

3 cups (400g) stone ground whole wheat flour

1/2 cup (50g) rolled oats, plus extra to sprinkle on top

2 teaspoons baking soda

2 ½ teaspoons Kosher salt

1 teaspoon brown sugar 

11 0z stout ale, stirred till nearly flat

cup buttermilk 

2 tablespoons blackstrap molasses

2 tablespoons butter, melted


Instructions

The Best Irish Brown Bread

  1. Preheat your oven to 350ºF (180ºC) and position a rack in the center. Lightly grease a 9‑inch loaf pan with butter or cooking spray, then line it with parchment paper so the loaf lifts out easily.
  2. In a large mixing bowl, whisk together the dry ingredients — whole‑wheat flour, rolled oats, baking soda, salt, and brown sugar — until everything is evenly combined.
  3. In a separate bowl or measuring pitcher, stir together the wet ingredients: ale, buttermilk, molasses, and melted butter. Pour the wet mixture into the dry ingredients and stir with a wooden spoon or rubber spatula just until no dry streaks remain. The batter will be thick and rustic.
  4. Scoop the mixture into your prepared loaf pan and spread it out so the top is level. Sprinkle a handful of rolled oats over the surface for texture.
  5. Bake for about 45 minutes, or until the loaf is a deep golden brown and a toothpick inserted into the center comes out clean.
  6. Let the bread rest in the pan for a few minutes, then lift it out and transfer it to a wire rack. Allow it to cool for at least 30 minutes before slicing — the flavor and texture settle beautifully as it rests.

Notes

  • Leftovers will last up to 5 days and remain very moist, wrapped in plastic wrap
  • Best reheating method: Wrap slices in Aluminum Foil and reheat in 350℉ oven for 10 minutes
  • Serve toasted with Irish butter for breakfast,  with a charcuterie board, or alongside a hearty soup or stew
